Scouting on foot means sampling: you check the rows you can reach and assume the rest. From above the whole field is one frame, and the parts worth walking to identify themselves before you have put a boot in the mud.
What people use it for

Finding the problem area before it spreads
Drainage, disease and pest pressure usually show as a patch that looks different from the air well before it is obvious at ground level. The point is not diagnosis from a photograph — it is knowing which forty feet of a hundred-acre field to go and look at.
Emergence and stand
Post-emergence imagery across the whole field at a consistent height, so gaps and skips are visible in one frame instead of sampled row by row. You or your agronomist do the counting — I fly it and hand over the frames, which is usually the slow part when a replant decision is on a short window.
Irrigation and water
Where water sits, where it runs and where it never reaches. Ponding and dry corners are among the clearest things an aerial frame shows and among the hardest to judge from the ground.
Orchards and specialty crops
Canopy coverage and row condition across a block, and the kind of frame a farm market or agritourism operation can actually use in its own marketing.

I fly it, you read it
This is imagery, not agronomy. I put a camera over the field and hand you the frames; the counting, the diagnosis and the prescription are yours or your agronomist's. Timing is the part I will push back on — the same field looks different at 9am and 2pm, and a scouting flight is only worth flying when the crop is at the stage you need to see. Tell me what decision the imagery is for and sometimes the honest answer is in three weeks.
